Marble Opens its Doors in Cape Town

Marble Cape Town opens its doors on the V&A Waterfront

Marble has become a restaurant synonymous with South African culture and diversity when it comes to the dining space. And, after much anticipation, it has now finally opened its doors to the Cape Town market.

The restaurant has snagged a dreamy spot along the V&A Waterfront in Castle Union House. Seating 220 guests, the Cape Town eatery also boasts a prominent wine cellar and wrap-around patio with panoramic views. Furthermore, the menu has been redesigned to infuse coastal influences, marking a new journey for Marble in the Mother City.

The Journey of Marble

Pioneered in 2016 by Chef David Higgs and entrepreneur Gary Kyriacou, Marble’s live-fire cooking and new iconic ‘Grillworks’ is now being introduced along the coast.

The two culinary masterminds creatively merged their signature fire-focused philosophy with seafood traditions. Head Chef Matt van Niekerk says: “Fire has a way of bringing people together. It’s where stories are shared, ideas come to life and connections are made.”

Kyriacou says: “We see incredible potential in bringing Marble’s unique experiences to Cape Town. While the concept has evolved slightly to reflect the essence of the Mother City, our commitment to delivering luxury through experience, quality and intuitive service remains constant.”

A New Menu Inspired by the Sea

‘Grillworks,’ unique to Marble Cape Town, is a cooking style that delivers bold flavours through the interplay of fire and finesse.

Signature starters on the menu include Snoek Pâté with Magwenya, or a Lamb and Beef Tartare with Pickled Waterblommetjies.

Significantly, mains feature Marble’s celebrated wood-fire Chalmar Ribeye, whilst new creations include Mussel Paella and Line Fish with Burnt Leeks and Roasted Fish Bone Sauce.

Higgs says: “One of the things I love most is how vegetables transform over fire. They develop a complexity and character you can’t achieve any other way.” He speaks highly of their Roasted Pumpkin with Candied Walnuts and Burnt Onion Dressing.

Last, but not least, Marble Cape Town’s desserts range from a Cheese and Crackers Board to a Lime Pie and their take on the supreme Granadilla Lolly (to make you jolly).

Alongside their cuisine is a menu full of signature cocktails too. Their wine list was curated by Group Wine Director, Wikus Human and Head Sommelier Jan-Hendrik Venter.

Look And Feel Of Marble Cape Town

With a prime spot in the historic Union Castle building of 800 square metres, the restaurant is soon to be Cape Town’s Instagram hotspot. In essence, Interior Director, Irene Kyriacou and Redecco were inspired by Cape Town’s natural elements of wind, sea and earth, blending it together to create a luxurious, yet calming atmosphere.

With floor-to-ceiling glass windows, each hour of the day is documented through sunlight and shadows. It also allows for a full panoramic view of the V&A Waterfront and estuary. Miraculously, the ceiling mimics the look and feel of flowing water, immersing diners in Cape Town’s way of life. Marble’s outdoor terrace extends the space to include the natural beauty surrounding the it too.

Local artworks by GRID, Krisjan Rossouw and Michael Beckurts bring the walls of Marble Cape Town to life. These eye-catching pieces celebrate the city’s beauty and culture and reflect the brand’s commitment to craftsmanship. Additional artistic elements include hand-stitched upholstery by Cassamento.
